Panner paratha is a North Indian dish made with greated panner, spices and wheat flour dough. It is a famous stuffing part of India. You can eat it in breakfast, lunch, tiffin or lunch box. Its rich texture will never dissatisfy you with its taste. I had never made this dish at home and you cannot imagine how tasty it was. Next time I am going to share the same recipe with you along with some tips and tricks. You also make it and enjoy it with your family.

About panner paratha:

Panner partha is a dish which is made with few ingredients and a simple process which is said to be very delicious. Punjabi people eat this for breakfast. Which is not only tasty but also healthy. The softness and spices of panner, called chatpata pan, this recipe has a different texture and is full of flover.

Ingredients:

For dough:

  • 2 cup wheat flour
  • Salt to taste
  • Water ( as per needed)
  • 1 tbsp oil or ghee


For staffing 

  • 1 cup greated panner
  • 2-3 green chillies ( finaly chopped)
  • 1/2 tbsp red chilli Powder 
  • 1/4 tbsp garam masala 
  • 1/2 tbsp roasted cumin seeds
  • Fresh coriander leaves 
  • Salt to taste 
  • Oil or ghee( to cook it)

Let's see how to make it step by step:

Preparing for daugh:

  • Make a ball of phela flour. For this, add wheat flour in a mixing bowl, add salt and add water as per requirement and make a soft dough of the flour.
  • Then add oil and ghee to it and mix it for 2-3 minutes and keep it aside for 30 minutes so that your paratha becomes more soft and delicious.

Make panner filling:

  • In a mixing bowl I may add grated panner, green chillies, red chilli powder, roasted cumin seeds, garam masala, coriander leaves, salt. 
  • Mix well so that there is uniform mixture. Taste or adjust the spices.

Assambal the paratha:

  • Then make small balls equal to the flour. Roll each ball into small circular shapes. 
  • Then add 2-3 tablespoons of stuffing in the center. 

  • Then gather the edges and make a dough circle so that the filling gets sealed inside. Forming pouch.
  • Then roll the pouch in a circle again. Apply a little pressure to avoid taring in dough.

Cook the paratha:

  • Heat a pan on medium flame. Then add the rolled paratha to the pan and let it cook for 1-2 minutes until the bubbles appease. 
  • Then flip the parathas and spread 1 tbsp ghee. 
  • Flip again and cook until both sides become golden brown and crispy.

Serving Suggestions:

  • You can serve it with Yoghurt, Green Chutney, Mango Pickle, Lemon Pickle, Curd, Butter, Mint Chutney and enjoy. 
  • For the added treat, serve it with a glass of buttermilk or Lassi to complete meal.

Tip's for perfect panner paratha:

  • Always using fresh panner gor the best taste and texture. I am using homemade panner this gives richness to your parathas.
  • If your panner have to moisture, then drain the excess water before gathering it.

  • Make sure the edges of dough prevent the filling form spilling.
  • This ensure that paratha cook in medium low flame to avoide the burning.

Variations to try:

Cheese panner paratha:

For cheese lovers add some greated cheese to the filling for googy and rich texture in paratha 

Panner and spinach:

Add finly Chooped spinach with panner for iron and  rich variations. And different taste and texture. 

Spicy panner paratha:

Increase the green chilies and red chilli powder for extra Spicer flover.

Panner bhurji paratha:

Make panner bhurji or if you have extra panner bhurji then add this staffing in paratha.
